Ham, egg and cheese cups

These are pretty good for a quick snack or breakfast. You can make them a head of time and freeze them, though reheating is not nearly as good as when they come out of the oven. mmmmmmm.

Ingredients

  • Cooking spray for pan
  • 12 slices ham
  • 1 c. shredded cheddar, chedder works great
  • 12 large eggs
  • salt Optional
  • Freshly ground black pepper

Instructions

  • Preheat oven to 400ยบ and grease a 12-cup muffin tin with cooking spray. Line each cup with a slice of ham and sprinkle with cheeze. Crack an egg into each ham cup and season with salt and pepper.
  • Bake until eggs are cooked through, 12 to 15 minutes (depending on how runny you like your yolks).

Notes

These are great a fast breakfast or snack. We make these in advance and freeze them then de thaw in the microwave. Maybe not as good as the day we made them but it works when we are running late.
